Right now I have bourbon barrel aged syrup in both the bottler and the finisher (the finisher {a 2′ x 6′ SS pan, propane fired} is what I pump all syrup to as it comes out of a bourbon barrel or a SS syrup barrel, or the draw off tank off the evaporator until it gets filtered. I now need to finish the bourbon barrel aged syrup and clean the bottler and the finisher before I can continue to process the new syrup. I haven’t even graded it yet, but my guess is that it’s amber, rich, I’ll know by Tuesday most likely and have some packed either Tuesday or Wednesday.
This is going to be a very busy week, it looks like the sap will be running very well and I need to finish the bourbon barrel aged syrup, reclean that equipment and process the new syrup all while boiling new sap. I may need to pump the new into a SS barrel to make more room until I catch up.
I will however catch up in a few days for sure if all goes well. I’ll post again when I have packed and graded the new syrup and will add the inventory to the online store. I’ll also ship out all back ordered syrup orders for whichever grade it proves to be.
