Back in stock


After several delays, I now have Dark, robust syrup back in stock. The large maple tree that was leaning towards the sugarhouse, 2 sap tanks, some empty SS barrels , my vacuum pump, my wooden structure for my releaser, my head tank and an elevated platform which holds my head tank (it supplies sap to the evaporator) has been taken down. Then it was again safe to work in the sugarhouse. Yesterday I bottled a bunch of Dark syrup, some was added to my stock in my online storefront and the rest was taken to my only local retail outlet (The Eclectic Chic), in Glenwood Plaza, Oneida.

In a day or 2, I’ll pack the rest of the dark syrup into 5 gal jugs to hold until I need to pack more dark syrup into retail sizes, then I’ll put 40 gal of Amber, Rich syrup into the finisher, bring it up to 200-205F, refilter it again (it was filtered as it was pumped into the SS barrel) then it will go into the bottler and I’ll start bottling Amber syrup. Weather permitting .(I don’t work in the sugarhouse when the wind is 15mph or more because of the issue my land has with blow down trees, this year so far 6 have blown down just around the sugarhouse, several more out away from the sugarhouse). When I get that bottled I’ll again post here , add the counts in my online storefront as well as restock my local retail location.
