I have now got some dark half gallons in stock, I’ll soon have other sizes, I also now have some amber to process and pack. I’d be doing it right now, but the wind is very strong and I don’t like working in the sugarhouse when a tree could blow down. While it didn’t hit the sugarhouse a 12″ hemlock next to the sugarhouse blew down 2 days ago. My soil is only about a foot deep (and it’s excellent soil) but under that is just sand. Trees don’t take a lot of wind with that sand so close to the top, and as a result I get a lot of blow downs. I’d rather not be in the sugarhouse if a large tree is blown down and lands on the sugarhouse. I’ll go do the syrup when this wind goes down. About 12 mph seems to be OK, now it’s 19 mph with gusts to 30+. The forecast calls for winds favorable to working in the sugarhouse on Sunday. If that proves true, I’ll bottle at least 15 more gallons of dark in more sizes (that’s what my bottler holds) Then I’ll pack the remaining dark syrup into either a SS barrel, or maybe into some 5 gal bulk jugs, I have 2, but can pickup more at a local source.
Once I get more sizes packed I’ll post an update and add the counts to my store. Some goes online, the rest gets stocked at my only local retail outlet, The Eclectic Chic, Glenwood Plaza, Oneida, NY.
